METHI MUNG CHAAT
Serves: 5.
Ingredients:
•100 g sprouted whole mung
•2 tbsp finely chopped tender small fenugreek leaves with the stalks
•1-2 green chillies
•1 tbsp lime juice
•100 g cucumber
•50 g tomato
•50 g boiled potato
•Black salt to taste
•Half tsp chaat masala powder
•One-fourth tsp roasted cumin powder.
Method of preparation:
Take a serving bowl. Put the mung and add the methi leaves.
Then add all the other ingredients one by one and finally add the salt, spices and lemon juice.
Mix it well and serve chilled.
Dieticians comments:
One serving will provide 5 g protein, 0.3 g fat, 15 g carbohydrate and 80 kcals.
This makes a good salad. It can be used instead of regular green salad with lunch or dinner or as a healthy snack.
Whole dals are packed with lots of nutrients such as protein, carbohydrates, fibre, iron, calcium and energy. Vegetables added will also add to the fibre content and thus help in controlling blood sugar rise. Sprouts are also very rich in vitamins and lime juice will add some vitamin C.
Add some fenugreek powder as well as it has been proven to reduce the level of glucose in the blood to some extent.
