Move over golden hour, there’s a new golden ghee in town, and it’s all we can talk about. Digital creator Sanjana Das and her mother have graciously shared their special Desi Ghee recipe just in time for the upcoming Diwali festivities. The magic ingredient? The creamy top layer of milk, that's all you need! Simply collect it and store it in an airtight container in the freezer for a month. When ready to use, blend it with some dahi and let it rest for six hours. After beating, wash the butter in ice-cold water, melt it on low heat, and strain it into a sterilised jar. And for an extra touch of flavour, Sanjana adds betel leaves to the mix.
Now, onto the exciting part — the delicious treats we can whip up with this homemade ghee... Think Ghee Mysore Paak, Jalebi, Kaju Katli, and perhaps a sumptuous Halwa. Sanjana, shall we call Swiggy Genie to make it happen?
